Orange And Cardamon Coconut Milk Malabi

Malabi is a traditional Israeli milk pudding. In this recipe I used coconut milk to lighten it up a bit. However whole milk works beautifully and adds extra richness. I created this recipe for the Spring 2017 issue of Sweet Paul Magazine.

Serves 4


Ingredients

· 3 cups of So Delicious brand coconut milk
· ¼ cup orange blossom honey
· ¼ cup plus one tablespoon arrowroot
· 1 teaspoon vanilla extract
· 1 teaspoon orange flower water
· 1 large pinch ground cardamom
· zest of one orange
· pinch sea salt

Compote:
· 1 tablespoon chopped dried Turkish dried figs
· 1 tablespoon sliced almonds
· 1 fresh figs chopped
· 1 tablespoon orange blossom honey
· 1 tablespoon orange rind in long strips
· 2 tablespoons water
· 1 teaspoon orange flower water

Directions

Give the orange strips a few chops with a sharp knife. Add to a small pot on low heat with the remaining ingredients and stir together until just warmed through and dried figs plump up a bit. Top each pudding with a spoonful compote and serve. If you have leftover compote, spread it on buttered toast the next morning!
