My most favorite Mediteranian salad seeds

I first discovered these addictive salad seeds in London’s acclaimed Ottolenghi. This charming cafe with a plethora of Mediteranian delictables. Salads and vegetables piled high on simple white platers. Mouthwatering desserts that make you want to try each and every one! Embellishing salads with seeds is a staple in Mediterranean cooking. Salads don’t get all the fun, seeds are great on soups, stews and  homemade flatbreads! I used to pack two or three jars to bring back to New York from London, until I discovered that there are available on their online store.  Or you can simply make them yourself!

makes about one cup


Ingredients

· 1/3 cup flaked almonds
· 1/3 cup pumpkin seeds
· 2 tablespoon sesame seeds
· 3 teaspoon nigella seeds
· pinch flaked chilli
· 1 teaspoon sea salt
· 1 teaspoon olive oil

Directions

Put all the ingredients in a small pan and cook over medium heat for three minutes, stirring all the time, until the sesame seeds take on some color. Remove from the heat and set aside to cool.
